How to Make Brownie Nut Cranberry Coffee Cake With Brownie Mix,
Do you have a box of brownie mix and want to make a lighter, healthier, brownie (inspired) nutty, cranberry, coffee cake?
Ingredients.
1 454g box brownie box mix (any flavor).
3 eggs.
1/4 cup (67 ml) vegetable oil.
1/4 cup (60 ml) water.
1/4 cup (60 ml) milk (reg or soy).
1 tsp instant coffee, regular or decaf (optional).
1/2 cup (55g) nuts, chopped (walnuts or pecans).
1/2 cup (60g) cranberries (dried).
3/4 cup (90g) wheat bran or whole wheat flour.
1 tsp baking powder.
Butter or margarine for greasing pan (9x9 or 8 individual mini-cake pans).

Steps.
1. Mix eggs, oil, water, milk, and (optional) instant coffee together in a large bowl until coffee has melted. (hand mixer works well).
2. Mix medium bowl stir together brownie mix, baking powder, wheat bran, nuts and cranberries together.
3. Grease pan at this point ensuring all sides and bottom are well oiled.
4. Preheat oven to 350ºF or 180ºC.
5. Stir dry ingredients into wet ingredients and STIR thoroughly for 2 minutes, stirring constantly until no lumps remain.
6. Pour this mixture into pan(s).
7. Bake in the preheated oven for 25-30 minutes.
8. Check with toothpick at 25 min mark.
9. Finished.
Tips.
Roasted sunflower seeds are best recommended for the nuts.
Use mini-cake pan.
Fill each cake 'well' a little over 1/2 full with batter.
Adding 2 extra eggs than what brownie box requires will ensure lighter cake.
Add 1 tsp of baking powder to help the cake rise.
Add wheat germ to reduce sweetness, make fluffier and add fibre.
Add instant coffee to give the cake a little 'kick'. Instant coffee, nuts and cranberries are optional.
