How to Make Gluten Free Amaranth Grits.
Learning how to cook different things is all part of the fun, and challenge, of cooking gluten free dishes. Here is a recipe for gluten free amaranth grits.
Ingredients.
1 cup of amaranth.
1 clove garlic, finely chopped or pressed.
1 medium onion, finely chopped.
3 cups of water or vegetable stock.
Sea salt or soy sauce to taste.
Hot sauce to taste.
Garnish: 2 plum tomatoes, if desired.
Steps.
1. Combine the amaranth, garlic, onion, and stock in a 2-quart saucepan.
2. Boil; reduce heat and simmer covered until most of the liquid has been absorbed, about 20 minutes.
3. Stir well. If the mixture is too thin or the amaranth not quite tender (it should be crunchy, but not gritty hard), boil gently while stirring constantly until thickened, about 30 seconds.
4. Add salt or soy sauce to taste. Stir in a few drops of hot sauce, if desired, and garnish with chopped tomatoes.
5. Finished.
Tips.
Once you've gotten familiar with the process, try expanding the ingredients.Warnings.
While ingredients call for soy sauce, check the ingredients of your soy sauce carefully. Many versions have wheat as one of its ingredients.
