How to Store Marzipan.
Marzipan is a sweet mixture of ground almonds, glucose and icing (powdered) sugar. It is also known as almond paste. The correct method of storage is important to ensure that it remains intact––too much moisture will cause it to dissolve, while allowing it to become too dry will cause it to ferment.
Steps.
1. Select the marzipan to be stored after removing it from the packaging. Cut away cleanly from the marzipan you're using.
2. Lay down a sheet of plastic food (cling) wrap. Cut the wrap larger than the piece of marzipan.
3. Wrap the marzipan tightly. Overlap the plastic wrap to ensure that air cannot enter the package.
4. Place the wrapped marzipan inside an airtight container.
5. Store. The marzipan will keep at room temperature in a dark, dry and cool place for up to 3 weeks.
