Tips for perfect chocolate chip cookies.

I have made these Perfect Chocolate Chip Cookies at least 20 times now. Not exaggerating.

I first made these when we were in the Philippines, when it was a struggle to just keep butter solid for 2 seconds on the counter, and they were absolutely incredible. I had no idea how or why, but they just WORKED. And they blew my mind in the way only a perfect chocolate chip cookie really can.

But then every once in a while, they didn’t work. I’m not always super exact with my baking, but still. They were not thick and chewy and buttery like the perfect cookie should be. Some of your comments said the same things – most of the time they worked, but sometimes they didn’t. And I don’t like that.
Now I’m back home in dry, cool Minnesota and I have been waiting for this day just so I could figure out what would really make these cookies awesome for you. You who live in normal climates and shop at Cub Foods. I am now speaking your cookie-baking language.

Since I’m responsible for bringing some treats up the cabin for my big family and I had an excuse to make excessive amounts of cookies, I made these. Many times. To get to the bottom of this cookie perfection.

So here are my semi-scientific but mostly trial-and-error regular home cook tips for perfect chocolate chip cookies that look like this on the inside.

Here are my simple tips for perfect chocolate chip cookies with an easy recipe for my all-time favorite, classic, perfect chocolate chip cookie.
USE SALTED BUTTER.
Butter. Butter butter butter, butter. Butter. Yum. Whether I’m baking or sauteing or eating the butter straight off the stick, I always choose good quality salted sweet cream butter. And I guess by good quality I mean the grocery store budget brand. Because, well, yum. It tastes really good, so that’s what I use.

MELT THE BUTTER ABOUT HALF WAY IN THE OVEN.
For me, for this blog, for these ultra-thick cookies, we melt the butter HALF WAY or less. So literally I heat the stick of butter until roughly half of it is melted. This gives me the most success with a cookie that is both soft and structured. And guess where I melt my butter? Well, I told you already. In the preheating oven. It goes slowly and it keeps most of the stick firm while just gently melting off the outer layer, unlike melting in the microwave where the whole thing gets kinda soggy. Try to melt half or less – my goal is usually about one third and it usually takes just 3-5 minutes. Set a timer, please! Any more than that will start to make the cookies flat (and you can check out my last picture of my failed cookies for proof).

BRING THE BUTTER BACK TO ROOM TEMPERATURE.
It’s almost like a soft solid again. I sometimes stick it in the fridge or freezer to help speed up the process but then I let it sit on the counter for a few minutes to come back to room temperature before actually making the dough.

I KNOW, I KNOW, I KNOW this is annoying. Because you just want to make cookies right now. Believe me, I know. But hot melted butter just doesn’t work the same way as the cooled, soft-solid room temperature butter. Beeee paaatient.

JUST BARELY BEAT THE EGG.
Just a little beating in with the sugar and butter will be enough. Too much beating makes the cookie more stiff, and I like ’em soft.

ADD FLOUR UNTIL THE DOUGH PULLS AWAY.
When in doubt, add a little flour to the dough, especially if the butter was melted. I always go by feel more than by measurement, because sometimes the amount of flour in a recipe (my OWN recipe) doesn’t seem right for a particular batch. This is what I always look for –> the dough to pull away from the sides of the bowl. Just slightly.

When you’re using those electric mixers and mixing all your flour in with your dough, if the dough is just stuck all over the sides of the bowl and feels wet, add a spoonful of flour. And again, and again, until your dough is soft and dry to the touch and pulls into a large dough ball at the center of the bowl when you’re mixing it.

I also notice that when I get just the right amount of flour in the dough, it makes kind of a delicate sticky noise when I stir it. Annnd you can file that under the world’s most obscure baking tips.

USE TWO KINDS OF CHOCOLATE CHIPS.
At least two, possibly ten. I love texture, so having at least two types or two shapes of chocolate in my cookie is a must. My favorites are Nestle semisweet chocolate chunks, Hershey’s milk chocolate chips, and Guittard dark chocolate chips. The slightly different tastes of the chocolate and the varied shapes and sizes of the chips make for a more interesting (ehmm, more chocolatey) cookie.

BAKE IN SMALLER BATCHES.
This is a weird one, but I always have better luck getting that awesomely thick and buttery cookie when I make half of my favorite recipe. Go figure. I included the measurements for the “half” recipe at the end of this post.

REFRIGERATE THE DOUGH.
This is a SOMETIMES tip. For the recipe in this post, I found that I actually really didn’t need to refrigerate the dough as long as I had enough flour, but sometimes you bake the first batch and you get spread-flat-cookie-city. In that case, try refrigerating or freezing the dough until it’s more firm to help it stay together better.

USE A CALPHALON COOKIE SHEET.
I don’t have a baking stone or any other fancy baking sheets, just a few cheap Target finds that sometimes do the pop-bend while baking. So this isn’t a hard and fast rule – this is just the cookie sheet out of my very basic cookie sheet collection that seems to work best the most often. It’s non-stick, dark, and small.

MAKE ’EM BIG.
Hi, I’m a crazy cookie lady and I mean really big. Like possibly 1/4 cup of cookie dough big. If everything goes like it should, the more dough you can cram into that dough ball, the thicker and more irresistibly divine they will be.

SHAPE YOUR COOKIES BY HAND.
I’ve spooned dough without shaping, I’ve used a special cookie dough scoop to get the rounded top, and yet the thing that works best for me is shaping them by hand. Like, literally, rolling them in between my palms to get a perfect round ball.

STRATEGICALLY PLACE YOUR CHOCOLATE CHIPS.
Sometimes I put tons and tons of chocolate chips in the dough, but then the tops of my cookies just look plain white. Mehhh. We want chunky, chocolatey cookies here. So I take a few chocolate chips from the dough bowl intentionally press a few extra into the top to make it look extra chocolate chippy.

LOOK FOR BARELY BROWNED SPOTS.
For this recipe, I always look for those very slightly browned spots on top. That’s how I know they’re done.

CROSS YOUR FINGERS.
Science shmience. For a regular baker like myself, sometimes baking just feels like a little bit of dumb luck. There are so many factors that can make a cookie great or not so great. Even if your cookies didn’t turn out juuust how you wanted them, I bet your dough still tastes pretty darn good, right? Grab a spoon and a glass of milk and enjoy.
One more thing before the recipe! I wanted to show you my three failed batches during testing, and the things that I think made them turn out the way that they did.


Half-batch perfect chocolate chip cookies.

Prep Time: 45 mins  Cook Time: 9 mins  Yield: 10–12 big cookies.

INGREDIENTS.

7 tablespoons salted butter, 3/4 cup white sugar, 1 tablespoon packed brown sugar.
1 1/4 cup all purpose flour (to start, but plan to add a few tablespoons), 1/2 teaspoon baking soda.
1 cup mixed varieties of chocolate chips,  1 teaspoon vanilla, 1 egg,  1/4 teaspoon salt.

INSTRUCTIONS.

Turn the oven on to 350 degrees. Put the butter in the oven in a stainless steel or glass bowl as it’s preheating until about one third to one half of the butter is melted. Do not melt more than half of the butter. Turn the oven off. Let the butter come back to room temperature for at least 30 minutes – it doesn’t have to harden completely but it should be a soft solid.
Add the sugar and vanilla. Cream with electric mixers until well mixed and lightly fluffy. Add the eggs and beat until incorporated..

Measure in the flour, baking soda, and salt. You can do this in a separate bowl, but I usually just dump it all into the mixing bowl. Slowly mix with the electric mixer on low speed, scraping the sides, until all the flour is incorporated. If the dough sticks to the sides of the bowl and looks wet, add one tablespoon of extra flour at a time until the dough feels dry and sticks together in one large ball. Too much flour will make the cookie stiff, so stop adding flour right when the dough starts to take on that dry look and feel. Stir in the chocolate chips with a wooden spoon.

Preheat the oven to 350 degrees. Roll 1/4 cup dough into high, round balls with chocolate chips at the top. Place on a baking sheet a few inches apart and bake for about 9 minutes. You want to take them out when they are puffy and just a tiny bit brown on the tops and edges. Let stand for a few minutes – they will lose a little of their puffiness but they should stay thick and hold together well.

Homemade Pizza Crust for Beginners | The Best Homemade Pizza You'll Ever Eat.

This easy pizza dough recipe is great for beginners and produces a soft homemade pizza crust. Skip the pizza delivery because you only need 6 basic ingredients to begin!

This is my go-to pizza dough recipe. It was published on my blog 6 years ago and after making it for the millionth time, I decided it’s time for an update with a video tutorial and clearer recipe instructions. Plus, many of you said you want to conquer your fear of yeast this year! Consider this your starting guide and refer back to it often.

(And if you’ve ever made homemade bagels or sandwich bread, you can easily make pizza dough because it’s quicker, easier, and requires less steps!)

Pizza dough is the foundation and every great pizza begins with a great pizza crust. Some like thin and crisp pizza crust, while others prefer thick and soft pizza crust. This homemade pizza crust has it all: soft & chewy with a delicious crisp and AWESOME flavor.

Why waste the time when you can just buy frozen pizza dough? Frozen pizza dough is certainly convenient, but from-scratch crust has a delicious flavor and texture that only comes from homemade. Plus, most of the work is hands-off!

Homemade Pizza Dough Ingredients.

All pizza dough starts with the same basic ingredients: flour, yeast, water, salt, and olive oil. Here’s the breakdown of what I use in my homemade pizza crust recipe.

Yeast: I use Red Star Platinum yeast. I have the best results when I use this instant yeast. The Platinum yeast is fantastic because its careful formula strengthens your dough and makes making working with yeast simple. You only need 1 standard packet of yeast (2 and 1/4 teaspoons) to get the job done.
Water: I tested this pizza dough recipe with different amounts of water. 1 and 1/3 cups is the perfect amount. Use warm water to cut down on rise time, about 100-110°F. Anything over 130ºF kills the yeast.
Flour: Use unbleached all-purpose white flour in this recipe. Bleaching the flour strips away some of the protein, which will affect how much water the flour absorbs. You can substitute bread flour for a chewier pizza crust, but add a couple extra Tablespoons of water since bread flour contains more protein than all-purpose flour.
Oil: A couple Tablespoons of extra virgin olive oil adds wonderful flavor to the dough. Don’t forget to brush the dough with olive oil before adding the toppings, which prevents the crust from tasting soggy.
Salt: Salt adds necessary flavor.
Sugar: 1 Tablespoon of sugar increases the yeast’s activity and tenderizes the dough, especially when paired with a little olive oil.
Cornmeal: Cornmeal isn’t in the dough, but it’s used to dust the pizza pan. Cornmeal gives the pizza crust a little extra flavor and crisp. Most delivery pizzas you enjoy have cornmeal on the bottom crust!

This is a Lean Bread Dough.
Pizza crust, like homemade bagels, artisan bread, and focaccia, requires a lean dough. A lean dough doesn’t use eggs or butter. Without the extra fat to make the dough soft, you’re promised a crusty pizza crust. (However, I recommend using some olive oil for flavor and to keep the interior on the softer side.) Recipes like dinner rolls and overnight cinnamon rolls require fat to yield a “rich dough,” which creates a softer and more dessert-like bread.

How to Make Easy Pizza Dough (for bread beginners!).

Mix the dough ingredients together by hand or use a hand-held or stand mixer.
Knead by hand or beat the dough with your mixer. I like doing this by hand and you can watch me in the video.
Place dough into a greased mixing bowl, cover tightly, and set aside to rise for about 90 minutes or overnight in the refrigerator.
Punch down risen dough to release air bubbles. Divide in 2.
Roll dough out into a 12-inch circle. Cover and rest as you prep the pizza toppings.
Top with favorite pizza toppings.
Bake pizza at a very high temperature for only about 15 minutes.
Little bakers can lend a hand AND have fun in the process. Let the kids help you press down the dough and shape into a circle. They can add their cheeses and make pepperoni faces on top of the pie. Who doesn’t love a smiley pizza?

How to Freeze Homemade Pizza Dough.

This recipe yields two 12-inch pizzas. After the pizza dough rises and you divide the dough in half (step 5), you can freeze one of the balls of dough to make pizza at a later time. Or you can simply freeze both balls of dough separately. Lightly coat all sides of the dough ball(s) with nonstick spray or olive oil. Place the dough ball(s) into individual zipped-top bag(s) and seal tightly, squeezing out all the air. Freeze for up to 3 months.

How to Thaw Frozen Pizza Dough.
Place the frozen pizza dough in the refrigerator for about 8 hours or overnight. When ready to make pizza, remove the dough from the refrigerator and allow to rest for 30 minutes on the counter.

Ingredients.
1 and 1/3 cups (320ml) warm water (between 100-110°F, 38-43°C).
2 and 1/4 teaspoons Red Star Platinum instant yeast (1 standard packet)*.
1 Tablespoon (13g) granulated sugar.
2 Tablespoons (30ml) olive oil.
3/4 teaspoon salt.
3 and 1/2 cups (440g) all-purpose flour (spoon & leveled), plus more for hands and surface.
sprinkle of cornmeal for dusting the pan.

Instructions.
Prepare the dough: Whisk the warm water, yeast, and granulated sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to rest for 5 minutes. *If you don’t have a stand mixer, simply use a large mixing bowl and mix the dough by hand with a wooden spoon in the next step.*
Add the olive oil, salt, and flour. Beat on low speed for 2 minutes. Turn the dough out onto a lightly floured surface. With lightly floured hands, knead the dough for 3-4 minutes (for a visual, watch me do it in the video above!). The dough can be a little too heavy for a mixer to knead it, but you can certainly use the mixer on low speed instead. After kneading, the dough should still feel a little soft. Poke it with your finger – if it slowly bounces back, your dough is ready to rise. If not, keep kneading.
Lightly grease a large bowl with oil or nonstick spray– just use the same bowl you used for the dough. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise at room temperature for 60-90 minutes or until double in size. (Tip: For the warm environment on a particularly cold day, heat your oven to 150°F (66°C). Turn the oven off, place the dough inside, and keep the door slightly ajar. This will be a warm environment for your dough to rise. After about 30 minutes, close the oven door to trap the air inside with the rising dough. When it’s doubled in size, remove from the oven.)
Preheat oven to 475°F (246°C). Allow it to heat for at least 15-20 minutes as you shape the pizza. Lightly grease baking sheet or pizza pan with nonstick spray or olive oil. Sprinkle lightly with cornmeal, which gives the crust extra crunch and flavor. Highly recommended.
Shape the dough: When the dough is ready, punch it down to release any air bubbles. Divide the dough in half. (If not making 2 pizzas, freeze half of the dough for another time– see freezing instructions below.) On a lightly floured work surface using lightly floured hands or rolling pin, gently flatten the dough into a disc. Place on prepared pan and, using lightly floured hands, stretch and flatten the disc into a 12-inch circle. Lift the edge of the dough up to create a lip around the edges. I simply pinch the edges up to create the rim. If using a pizza stone, place the dough directly on baker’s peels dusted with cornmeal.
Cover dough lightly with plastic wrap or a clean kitchen towel and allow to rest for a few minutes as you prepare your pizza toppings. I suggest pepperoni & green peppers or jalapeño slices, extra cheese pizza, Hawaiian pizza, classic margherita pizza, spinach artichoke white pizza, or homemade BBQ chicken pizza.
Top & bake the pizza: To prevent the filling from making your pizza crust soggy, brush the top lightly with olive oil. Using your fingers, push dents into the surface of the dough to prevent bubbling. Top with your favorite toppings and bake for 12-15 minutes.
Slice hot pizza and serve immediately. Cover leftover pizza tightly and store in the refrigerator. Reheat as you prefer. Baked pizza slices can be frozen up to 3 months.

Notes.

Freezing Instructions: This recipe yields two 12-inch pizzas. Overnight/All Day Instructions: Prepare the dough through step 3, but allow the dough to rise for 8-12 hours in the refrigerator. (If it needs to be in the refrigerator for longer, use cooler water in the dough which will slow the dough’s rise and allow for more time.) The slow rise gives the pizza dough wonderful flavor! When ready, continue with step 5. If the dough didn’t quite double in size overnight, let it sit at room temperature for 30-45 minutes before punching down (step 5).
Special Tools: KitchenAid Stand Mixer, Dough Scraper, Pizza Pan, Pizza Cutter
Yeast: Red Star Platinum yeast is an instant yeast. You can use active dry yeast instead. The rise time will be up to 2 hours. Reference my Baking with Yeast Guide for answers to common yeast FAQs.

How to Roasting Avocado Fries in an Oven.

Avocados are a delicious superfood packed with nutrients, healthy fats, and fiber. While there are many ways to cook with this versatile fruit, baking avocados is one easy and delicious technique that leaves plenty of room to be creative. You can cook a simple but delicious breakfast with avocado and eggs while adding your own zesty toppings. For a healthy alternative to potatoes, you can roast avocado fries as a side dish to a meat- or plant-based burger. And if you're in the mood for a quick and easy snack, simply putting avocado halves in the oven topped with your favorite cheese will fill you up!

Ingredients.
3 avocados.
1⁄2 cup (120 ml) all-purpose flour.
Salt and pepper.
2 eggs.
1 1⁄2 cups (350 ml) panko breadcrumbs.
1 tablespoon (15 ml) melted butter or margarine.
1⁄2 teaspoon (2.5 ml) garlic powder.
1⁄2 teaspoon (2.5 ml) onion powder.
1⁄2 teaspoon (2.5 ml) paprika.
1⁄2 teaspoon (2.5 ml) salt.
1⁄4 teaspoon (1.2 ml) ground black pepper.
3 mixing bowls.
Cooking spray.
Baking sheet.
Wire rack.

Steps.

1. Preheat the oven to 450 °F (232 °C). As your oven is preheating, gather all of your ingredients, including your avocados, flour, eggs, panko breadcrumbs, and assorted spices. In addition, grab three mixing bowls.

2. Cut the avocados in half and remove the pits and skins. After removing the pits, carefully scoop the avocados out of the skin while keeping their shape. Slice the avocados lengthwise for the desired thickness. The slices should not be too thin but thick enough to keep shape.

As long as the avocado is not overripe, it should come out solid but not too hard. 3 avocados should yield 20-22 fries.

3. Add 1⁄2 cup (120 ml) of flour in the first mixing bowl. Add a pinch of salt and a pinch of black pepper into the flour. Mix the flour, salt, and pepper well.

Kosher salt and freshly ground black pepper work well for this recipe.

4. Crack the eggs into the second bowl. Keeping the egg whites and yolks together, lightly beat the eggs. As you crack the eggs into the bowl make sure that no shells fall into the mixture. Set the bowl to the side.

One vegan alternative to eggs would be 6 fluid ounces (180 ml) of silken tofu with 2 tablespoons (30 ml) of non-dairy milk.

5. Combine the panko breadcrumbs and melted butter in the third bowl. Mix the ingredients, and add garlic powder, onion powder, paprika, salt, and pepper. Stir to combine all ingredients.

6. Dip the avocado slices into the flour and beaten egg. After you have dipped each avocado slice into the flour and egg, coat the slices thoroughly with the panko and place on the wire rack. Spray the avocado slices with the cooking spray of your choice.

The wire rack should be placed on top of a baking sheet for stability and to catch any ingredients that fall off the rack.If you do not have a wire rack, it is fine to bake the fries on greased aluminum foil or parchment paper on a baking sheet. Turn the fries halfway through baking.

Olive oil or vegetable oil spray works well for this recipe.

7. Bake the avocado slices for 20-25 minutes. Once the panko is lightly brown, remove the avocado fries from the oven. Let the slices cool for 10 minutes. Serve with your favorite dipping sauce!



Tips.

As with most fruits, ripeness is key. Always cook with ripe avocados. You can tell when an avocado is ripe by holding it in the palm of your hand and squeezing. If the avocado is hard, it is not ripe. If it is mushy, it is overripe. The perfect avocado will yield a minimal amount of pressure, and the skin should “give” slightly but not remain indented.

Some methods for increasing the ripening speed for avocados include putting the fruit in a paper bag overnight or baking the avocado wrapped in foil at 200 °F (93 °C)}. While these methods might work occasionally, it is always best to let avocados ripe naturally.

There are countless ways to bake avocados. Be creative with your ingredients, and do an online search for many more recipes.

Warnings.

As with any baking recipe, make sure to use safe handling practices when removing your avocados from the oven. Be mindful of oven temperatures, and keep a close eye on your avocados as they are baking.

Practice sanitary cooking methods, and wash your hands often.

Wipe down all kitchen surfaces with an antibacterial cleaner and disposable paper towel.

How to Cooking an Avocado with Melted Cheese.

Ingredients.
1 avocado.
Salt and pepper.
Shredded cheese.
Other seasonings and toppings to taste (optional).
Baking sheet.

Steps.

1. Preheat the oven to 325 °F (163 °C). While your oven is preheating, gather your avocado, salt, pepper, and shredded cheese. If you did not buy packaged shredded cheese, now is the time to grate the cheese in preparation for this recipe.

2. Cut the avocado in half and remove the pit. After you have cut the avocado lengthwise down the middle with a sharp knife, open the two halves and remove the pit. Season each half with salt and pepper.

3. Top the avocado halves with the shredded cheese of your choice. Make sure to include an even distribution of cheese on each half. Be careful not to add too much cheese, as it could overpower the taste of the avocado. Shredded pepper jack or a Mexican blend of Monterrey jack, cheddar, and asadero would work well for this dish.

Pico de gallo is another ingredient that pairs well with the avocado and shredded cheese. Make sure to add the pico de gallo before you top the avocado with the cheese. You may purchase store bought pico de gallo or make your own.

Other toppings can include cilantro, lime juice, or chopped jalapeño.

4. Crinkle two pieces of foil and place each avocado half into each piece. After you have set the halves in the foil and are certain they will stay secure, place your avocado on a baking sheet.

The foil will keep the halves from rolling around on the baking sheet and will catch any cheese that melts off of the avocado.

5. Bake the avocado for 8-12 minutes. Once you see that the shredded cheese has melted and the avocado halves are warm throughout, remove the halves from the oven, let cool, and enjoy!

How to Baking an Avocado with Eggs.

Avocados are a delicious superfood packed with nutrients, healthy fats, and fiber. While there are many ways to cook with this versatile fruit, baking avocados is one easy and delicious technique that leaves plenty of room to be creative. You can cook a simple but delicious breakfast with avocado and eggs while adding your own zesty toppings. For a healthy alternative to potatoes, you can roast avocado fries as a side dish to a meat- or plant-based burger. And if you're in the mood for a quick and easy snack, simply putting avocado halves in the oven topped with your favorite cheese will fill you up!

Ingredients.
1 avocado.
2 eggs.
1 lime.
Salt and pepper.
Optional toppings.
Flour or corn tortillas (optional).
Baking sheet.

Steps.

1. Preheat the oven to 450 °F (232 °C). A standard oven will work fine for baked avocado with eggs. As your oven is preheating, gather your avocado, eggs, lime, salt, pepper, and any additional toppings.

For best results, adjust the oven rack so that it is located in the middle position.

2. Cut the avocado in half and remove the pit. Cut the avocado by taking a sharp knife and cutting lengthwise down the middle around the pit. At this point, you can open the two halves, exposing the pit.

3. Scoop out the center of each avocado half. After you have removed the pit, use a spoon to scoop out the center of each half about 1 1⁄2 tablespoons (22 ml). Each center should be able to hold one egg.
